Try This Honey Lime Plantains Recipe
After I shared my article on seven interesting facts about Plantains, I thought I should share this yummy recipe I found for Honey Lime Plantains. This is a healthier version compared to what I’m use to getting at restaurants. Recipe courtesy of Health.com. I hope you like it!
3 cups frozen sliced plantains
1/3 cup unsalted pumpkinseed kernels
2 tablespoons honey, lightly heated
1/4 teaspoon salt
2 tablespoons fresh lime juice
1. Preheat oven to 375°.
2. Place plantains in a large saucepan; add water to just cover. Bring to a boil. Cook 5 minutes or until tender; drain and transfer to large bowl. Stir in pumpkinseed kernels, honey, and salt.
3. Spread mixture on baking pan lined with foil and coated with cooking spray. Bake at 375° for 15 minutes, turning once. Drizzle with juice.
